Garlic and Herb-Mashed Parsnips

fat-free milk 3 Tbsp
chopped fresh parsley 1 tsp
chopped fresh tarragon 1 tsp

Fill a large saucepan 2/3 full with water and bring to a boil. Add parsnips and garlic cloves. Boil for 10-15 minutes or until parsnips are soft. Drain.

In a medium bowl, add all ingredients and, with an electric mixer or a whisk, beat until pureed.
