Apple Cake with Lemon Thyme

tart large apple (e.g., Granny Smith), about 1 1/2 cups, cubed and peeled 1
finely chopped, fresh thyme leaves (try to use lemon thyme if you can find it) 4 Tbsp
fresh lemon juice 1 Tbsp
unbleached all-purpose flour 2 cups
Splenda sweetener 0.75 cup
baking powder 1.50 tsp
baking soda 0.75 tsp
cinnamon 0.75 tsp
nutmeg 0.50 tsp
salt 0.13 tsp
eggs, lightly beaten 2
canola oil 0.33 cup
orange juice 0.25 cup
vanilla 1 tsp

Preheat oven to 350°F. Lightly coat with nonstick spray and flour an 8 × 8 square pan. Combine the apples, thyme, and lemon juice, and set aside.


Combine the flour, Splenda, baking powder, baking soda, cinnamon, nutmeg, and salt in a separate bowl. In a large bowl combine the eggs, oil, orange juice, and vanilla.


Add the apple-thyme mixture and mix until blended. Add dry ingredients, stirring until just combined. Spoon batter into prepared pan and bake for 30 minutes. Allow to cool before serving.
