Applesauce adds moistness and flavor to this coffee cake. Make this large amount and freeze half for another breakfast. This is lower in sugar and fat than most coffee cakes.

oats (old fashioned or quick) 3 cups
unbleached all-purpose flour 1.50 cups
whole-wheat flour 1 cup
firmly packed brown sugar 1 cup
baking powder 1 Tbsp
ground allspice 1 tsp
tspground cinnamon 0.50
unsweetened applesauce 2 cups
fat-free milk 1 cup
canola oil 0.50 cup
egg substitute (equal to 2 eggs) 0.50 cup
Optional Topping: Tbsps firmly packed brown sugar and 1/4 tsp ground cinnamon 2

Preheat oven to 375 degrees.

Combine the first eight ingredients in a large bowl.

Mix the next four ingredients in a small bowl. Add to the dry ingredients and stir just until moistened.

Pour into a 9-inch by 13-inch baking dish that has been sprayed with nonstick cooking spray. Sprinkle optional topping ingredients over batter. Bake for 35–40 minutes or until golden brown.
