Baked Fish Wrapped in Lettuce

| zucchini, diced | 1 |
| squash, diced | 1 small |
| carrot, shredded | 1 |
| Smart Balance margarine | 4 tsp |
| marjoram | 1 Tbsp |

Preheat oven to 400°F.
2:Place lettuce leaves in hot water and let stand until wilted and then drain.
3:Place the fish on the lettuce. Mound a portion of the zucchini, squash, and carrots on the fillet along with a small amount of margarine. Season with marjoram and pepper.
4:Then fold the leaf around the fish and place seam side down in a large baking dish and place in oven.
5:Bake for approximately 25–30 minutes, until fish flakes easily with a fork.
