Nothing beats the warm smell of a freshly baked loaf of bread, always a favorite at breakfast or as a snack. Indulge in a slice of this hearty raisin bread, spread with just a touch of margarine or jam. (Be sure to add in the appropriate exchange for the spread you choose.)

| all-purpose flour | 3.75 cup |
| baking powder | 3.50 tsp |
| sugar | 0.25 cup |
| salt | 1.50 tsp |
| evaporated (fat-free) skim milk | 1.25 cup |
| margarine, melted | 0.33 cup |
| eggs, or 1/2 cup egg substitute | 2 large |
| orange zest, grated | 2 tsp |
| raisins, chopped | 0.50 cup |
Preheat the oven to 350°F. Prepare a 9x5-inch loaf pan with nonstick pan spray.
2:Sift the flour, baking powder, sugar, and salt into a large bowl.
3:Mix the milk, margarine, eggs, and orange zest in a medium bowl. Add to the dry ingredients.
4:Mix until just blended; stir in the raisins.
5:Pour into the prepared pan and bake for 1-1/4 hours.
6:Cool on a wire rack at room temperature at least 1-1/2 hours before slicing into 18 slices.
