Retro Pasta Salad with Ham

This light dish is a great choice for a summer BBQ or lunch.

uncooked whole-grain penne pasta 6 oz
extra-lean ham, chopped 4 oz
finely chopped green bell pepper 1 cup
thinly sliced celery 0.75 cup
finely chopped red or yellow onion 0.25 cup
sweet pickle relish 3 Tbsp
reduced-fat mayonnaise 0.33 cup

Cook pasta according to package directions, omitting any salt or fats.


Meanwhile, in a medium mixing bowl, combine remaining ingredients. Mix well and set aside.


Drain cooked pasta in colander and run under cold water until completely cooled. Shake off excess liquid.


Add pasta to ham mixture and mix gently, yet thoroughly.
