Blueberry Chutney

An unusual chutney that's sweet but not overly so, and delightful with pork, poultry, or cottage cheese.

onion, chopped 0.50 cup
sugar 0.50 cup
cider vinegar 0.33 cup
golden raisins 3 Tbsp
gingeroot, chopped, peeled 2 tsp
ground cinnamon 1 tsp
mustard seeds 0.50 tsp
ground cloves 0.25 tsp
cayenne pepper 0.16 tsp

Combine all the ingredients with 1 cup water in a large non-aluminum saucepan. Bring to a boil over medium heat. Lower the heat and simmer, uncovered, for 1 hour, or until thick.

Cover and chill to use within 1 week, or freeze for up to 6 months.
