Bolognese Sauce

This traditional Italian meat sauce is a snap to make and freezes well. Make a big batch so you always have some on hand. Use it as a base sauce for lasagna or ladle some over any shape of pasta, from angel hair to ziti.

chopped onion 0.50 cup
clove garlic, minced 1 ea
carrot,coarsely chopped 0.25 cup
can diced tomatoes in puree, undrained 16
dry red wine 0.25 cup
chopped fresh basil 1 Tbsp
chopped fresh oregano 2 tsp
salt 0.75 tsp
fresh ground black pepper 0.16 tsp
tomato paste 1 Tbsp

Brown the ground beef in a large nonstick skillet with the onion, garlic, and carrot over medium heat; drain off the fat and return the beef and vegetables to the skillet.


Add the tomatoes with their liquid, the wine, and the seasonings and herbs. Cover and simmer for 40 to 45 minutes, stirring occasionally.


Stir in the tomato paste; simmer, uncovered for 5 to 10 minutes, until slightly thickened.
