Hot German-Style Potato Salad

This is an old-fashioned recipe with a lot of down-home flavor-a perfect starch to serve with lean meat loaf, burgers, pork tenderloin, or skinless chicken breasts.

| medium potatoes (about 1-1/2 pounds) | 5 ea |
| bacon | 5 slices |
| vinegar | 0.25 cup |
| egg | 1 ea |
| sugar | 2 tsp |
| salt | 0.25 tsp |
| fresh ground black pepper | 0.25 tsp |
| chopped onion | 0.50 cup |
Peel and halve the potatoes and cook in boiling water until tender. Drain and slice. Set aside.
2:Cook the bacon until crisp. Drain, reserving 1 tablespoon of bacon fat. Crumble the bacon and set aside.
3:In a large nonstick skillet, combine the 1 tablespoon bacon fat, the vinegar, 1/4 cup water, the egg, sugar, salt, and pepper. Place over moderately low heat and stir constantly until the dressing is thickened; do no allow the egg to coagulate.
4:Add the reserved potatoes and crumbled bacon; stir in the onion. Mix and heat through. Serve hot.
