Red Potato Salad

red potatoes 1
diced red onion 6 Tbsp
celery, diced 0.50 cup
lite mayonnaise 3 Tbsp
Dijon mustard 2 Tbsp
salt 0.50 tsp
black pepper 0.50 tsp
chopped green onions 2 ea

In a large pot, bring the water to a boil. Add the potatoes. Return the water to a simmer, cover, and cook for 15-20 minutes, or until done. Remove the potatoes from the water and let them cool.


Cut the potatoes into quarters and place them in a large bowl. Add the next ingredients and mix together gently. Refrigerate overnight. Garnish with chopped green onions.
