Corn Salad

Place a wet paper towel under your cutting board to anchor it while you are dicing vegetables.

frozen corn 2 cup
green bell pepper, finely diced 1 cup
red bell pepper, finely diced 1 cup
red onion, finely diced 0.50 cup
fresh basil, chopped 0.50 tsp
balsamic vinegar 0.25 cup
olive oil 2 tsp
salt 0.50 tsp
ground black pepper 0.25 tsp

Place frozen corn in a colander and run under cold water for about 5 minutes to thaw.


In a medium bowl, toss together corn, green and red pepper, red onion, and basil.


In a small bowl, whisk together remaining ingredients and pour over salad. Toss to coat.
