Tangy Apricot-Glazed Pork Tenderloin

The tenderloin is a lean cut of any meat. Typically, round or loin cuts are leaner meats.

| light sugar-free apricot preserves | 0.50 cup |
| apple cider vinegar | 0.25 cup |
| dried sage | 0.50 Tbsp |
| dried basil | 0.50 Tbsp |
| dried thyme | 0.50 Tbsp |
| garlic cloves, minced | 2 ea |
| salt | 0.50 tsp |
| ground black pepper | 0.50 tsp |
Preheat oven to 350 degrees. Trim tenderloin of all visible fat. Set aside.
2:In small saucepan, combine preserves, vinegar, herbs, and garlic over medium heat. Simmer for 3 minutes to make a glaze.
3:Season all sides of the tenderloin with salt and pepper. Place tenderloin in a shallow baking dish.
4:Coat tenderloin with apricot glaze and bake for 30 minutes or until pork is done.
