Pecan Chicken

Pecans are high in fat, so this recipe only uses a small amount . . . but a small amount provides big flavor!

cornflake crumbs 1 cup
chopped pecans 0.50 cup
garlic salt 0.50 tsp
onion salt 0.50 tsp
egg 1 ea
egg whites 2 ea
all-purpose flour 2 Tbsp
boneless, skinless chicken breasts 4

Preheat oven to 350 degrees. Coat a shallow baking pan with cooking spray.


In a medium bowl, combine corn- flake crumbs, pecans, garlic salt, and onion salt. In a separate bowl, lightly beat egg and egg whites. Put the flour in a third bowl.


Dip each chicken breast in the flour, then the egg mixture, then in the cornflake and pecan mixture. Coat each side of the chicken breast.


Place chicken breasts in the baking pan. Spray chicken lightly with cooking spray and bake 30–35 minutes or until chicken juices run clear.
