Hearty Lentil Soup

lean smoked pre-cooked turkey sausage (Kielbasa), sliced 14
celery, diced 1 cup
medium onion, diced 1 ea
carrot, diced 1 ea
water 3 cup
14.5-ounce can fat-free, reduced-sodium chicken broth 1 ea
14.5-ounce cans no-salt-added diced tomatoes 2 ea
dried lentils 1 cup
salt (optional) 0.50 tsp
ground black pepper 1 tsp
bay leaf 1 ea
1:

Coat a large soup pot with cooking spray. Over medium-high heat, saute sausage until lightly brown. Remove from pan.

Add celery, onion, and carrots to pot and saute over medium-high heat for approximately 4 minutes.

3:

Add the sausage and all remaining ingredients. Bring to a boil; reduce heat and simmer for 1 hour.

Remove bay leaf and serve.
