Sweet and Sour Pork

| jarred sweet-and-sour sauce | 6 Tbsp |
| fat-free, reduced-sodium chicken broth | 0.75 cup |
| boneless center-cut pork chops, cubed | 1 |
| ground black pepper | 1 tsp |
| olive oil, divided | 1 Tbsp |
| green bell pepper, divided | 1 ea |
| pineapple chunks packed in juice, drained | 1 cup |
Mix sweet and sour sauce with chicken broth and set aside.
2:Sprinkle pork with pepper. In a large nonstick skillet or wok, saute pork cubes in 1/2 tablespoon olive oil over medium-high heat until cooked through and beginning to brown. Set the cooked pork aside in a bowl.
3:In the same pan, saute green peppers in 1/2 tablespoon olive oil for 2 minutes. Add the pork and pineapple to the peppers. Pour sauce over pork mixture and simmer for 5 minutes. Serve over rice.
