If you're vegetarian, try this recipe without the sausage.
|cooking spray||1 ea|
|lean, smoked turkey sausage, sliced||14|
|onion, chopped||1 med.|
|green bell pepper, chopped||1 med.|
|garlic clove, minced||1 ea|
|16-ounce cans kidney beans, undrained||2 ea|
|cayenne pepper||0.50 tsp|
|Worcestershire sauce||1 Tbsp|
|uncooked brown rice||1 cup|
In a large saucepan coated with cooking spray, sauté sausage for 5 minutes over medium-high heat. Add onion and green pepper and sauté another 5 minutes. Add garlic and sauté 30 seconds.2:
Stir in beans, pepper, cayenne pepper, Worcestershire sauce, and water over medium-high heat.3:
Bring to a boil; reduce heat and simmer, uncovered, 25 minutes.4:
Add brown rice, cover, and simmer another 35 minutes.
