Red Beans and Rice

If you're vegetarian, try this recipe without the sausage.

cooking spray 1 ea
lean, smoked turkey sausage, sliced 14
onion, chopped 1 med.
green bell pepper, chopped 1 med.
garlic clove, minced 1 ea
16-ounce cans kidney beans, undrained 2 ea
cayenne pepper 0.50 tsp
Worcestershire sauce 1 Tbsp
water 2 cup
uncooked brown rice 1 cup

In a large saucepan coated with cooking spray, sauté sausage for 5 minutes over medium-high heat. Add onion and green pepper and sauté another 5 minutes. Add garlic and sauté 30 seconds.


Stir in beans, pepper, cayenne pepper, Worcestershire sauce, and water over medium-high heat.


Bring to a boil; reduce heat and simmer, uncovered, 25 minutes.


Add brown rice, cover, and simmer another 35 minutes.
