Garlic and Herb-Mashed Parsnips

If you don't like the flavor of tarragon, try basil in this recipe instead.

parsnips, peeled and cubed 8 med.
whole garlic cloves, peeled 4 ea
fat-free milk 3 Tbsp
chopped fresh parsley 1 tsp
chopped fresh tarragon 1 tsp
salt 0.50 tsp
ground black pepper 0.25 tsp

Fill a large saucepan 2/3 full with water and bring to a boil. Add parsnips and garlic cloves. Boil for 10-15 minutes or until parsnips are soft. Drain.


In a medium bowl, add all ingredients and, with an electric mixer or a whisk, beat until pureed.
