Garlic and Herb-Mashed Parsnips

If you don't like the flavor of tarragon, try basil in this recipe instead.

| whole garlic cloves, peeled | 4 ea |
| fat-free milk | 3 Tbsp |
| chopped fresh parsley | 1 tsp |
| chopped fresh tarragon | 1 tsp |
| salt | 0.50 tsp |
| ground black pepper | 0.25 tsp |
Fill a large saucepan 2/3 full with water and bring to a boil. Add parsnips and garlic cloves. Boil for 10-15 minutes or until parsnips are soft. Drain.
2:In a medium bowl, add all ingredients and, with an electric mixer or a whisk, beat until pureed.
