Salmon Patties with Lemon Sauce

Salmon is another great source of heart healthy omega-3 fatty acids -- and it's easy to make!

14.75-ounce can salmon 1 ea
egg 1 ea
ground black pepper 0.50 tsp
crushed saltine crackers 0.25 cup
Dijon mustard 1 Tbsp
dried parsley 1 Tbsp
Juice of one lemon 1 ea
margarine 2 Tbsp
fresh parsley, chopped 1 tsp

In a medium bowl, combine all patty ingredients together. Divide into 4 equal servings. Shape into 1/4-inch thick patties.

Coat a large nonstick skillet with cooking spray. Cook patties over medium heat approximately 5 minutes on each side or until golden brown.

To prepare sauce, combine lemon juice, margarine, and parsley in a saucepan and simmer 5 minutes.

Serve 2 teaspoons sauce over each salmon patty.
