Salmon Patties with Lemon Sauce

Salmon is another great source of heart healthy omega-3 fatty acids -- and it's easy to make!

| 14.75-ounce can salmon | 1 ea |
| egg | 1 ea |
| ground black pepper | 0.50 tsp |
| crushed saltine crackers | 0.25 cup |
| Dijon mustard | 1 Tbsp |
| dried parsley | 1 Tbsp |
| Juice of one lemon | 1 ea |
| margarine | 2 Tbsp |
| fresh parsley, chopped | 1 tsp |
In a medium bowl, combine all patty ingredients together. Divide into 4 equal servings. Shape into 1/4-inch thick patties.
2:Coat a large nonstick skillet with cooking spray. Cook patties over medium heat approximately 5 minutes on each side or until golden brown.
3:To prepare sauce, combine lemon juice, margarine, and parsley in a saucepan and simmer 5 minutes.
4:Serve 2 teaspoons sauce over each salmon patty.
