Salmon Patties with Lemon Sauce

Serving Size: 1 patty
Salmon is another great source of heart healthy omega-3 fatty acids -- and it's easy to make!
|14.75-ounce can salmon||1 ea|
|ground black pepper||0.50 tsp|
|crushed saltine crackers||0.25 cup|
|Dijon mustard||1 Tbsp|
|dried parsley||1 Tbsp|
|Juice of one lemon||1 ea|
|fresh parsley, chopped||1 tsp|
In a medium bowl, combine all patty ingredients together. Divide into 4 equal servings. Shape into 1/4-inch thick patties.2:
Coat a large nonstick skillet with cooking spray. Cook patties over medium heat approximately 5 minutes on each side or until golden brown.3:
To prepare sauce, combine lemon juice, margarine, and parsley in a saucepan and simmer 5 minutes.4:
Serve 2 teaspoons sauce over each salmon patty.
