|frozen peas and carrots, thawed||2 cups|
|scallions, thinly sliced||6|
|light soy sauce||3 Tbsp|
|vegetable broth||0.25 cup|
|black pepper||0.25 tsp|

In a large skillet or wok, heat the oil over medium-high heat. Add the rice; stir-fry for 8 to 10 minutes.2:
Add the peas and carrots and the scallions; stir-fry for 1 minute.3:
Add the soy sauce, vegetable broth, and pepper; mix well. Reduce the heat to medium-low and cook, stirring constantly, for 2 to 3 minutes, or until thoroughly mixed and heated through.
