Apple Cake with Lemon Thyme

| unbleached all-purpose flour | 2 cups |
| Splenda sweetener | 0.75 cup |
| baking powder | 1.50 tsp |
| baking soda | 0.75 tsp |
| cinnamon | 0.75 tsp |
| nutmeg | 0.50 tsp |
| salt | 0.13 tsp |
| eggs, lightly beaten | 2 |
| canola oil | 0.33 cup |
| orange juice | 0.25 cup |
| vanilla | 1 tsp |
Preheat oven to 350°F. Lightly coat with nonstick spray and flour an 8 × 8 square pan. Combine the apples, thyme, and lemon juice, and set aside.
2:Combine the flour, Splenda, baking powder, baking soda, cinnamon, nutmeg, and salt in a separate bowl. In a large bowl combine the eggs, oil, orange juice, and vanilla.
3:Add the apple-thyme mixture and mix until blended. Add dry ingredients, stirring until just combined. Spoon batter into prepared pan and bake for 30 minutes. Allow to cool before serving.
