Asian Turkey Pasta

Warm peanut-flavored turkey tops chewy soba noodles in this tasty dish.

| low fat, low sodium beef broth | 0.67 cup |
| ground red pepper | 0.25 tsp |
| lite soy sauce | 3 Tbsp |
| dry sherry | 1 Tbsp |
| cornstarch or arrowroot powder | 1 Tbsp |
| water | 2 Tbsp |
| diced cooked turkey (preferably white meat) | 3 cups |
| carrots, thinly sliced | 0.50 cup |
| diced red pepper | 0.25 cup |
| sliced scallions | 0.25 cup |
| romaine lettuce leaves | 5 large |
| cooked soba noodles | 3 cups |
| toasted sesame seeds | 1 Tbsp |
In a large saucepan over medium heat, combine the peanut butter and the broth.
2:Stir until smooth.
3:Add the red peppers, soy sauce, and sherry.
4:Bring to a boil.
5:Lower the heat and simmer for 3 minutes.
6:Combine the cornstarch or arrowroot powder with the water. Add to the sauce. Cook until thickened.
7:Add the cooked turkey, carrots, pepper, and scallions to the sauce. Toss to coat well.
8:Place the romaine lettuce leaves on a platter. Place the warm soba noodles on top of the lettuce. Pile the turkey salad in the center of the noodles.
9:Sprinkle on the sesame seeds and serve.
