Baby Carrots with Fresh Mint

|lb baby carrots||1|
|fresh chopped mint||1.50 Tbsp|
|Salt and pepper to taste|
Bring 4 cups of lightly salted water in a medium saucepot to a boil. Add in the carrots, cover, and cook for about 4 minutes. Turn off the heat and let stand in the hot water for 2 minutes. Drain.2:
Add the carrots to a serving bowl. Drizzle with honey. Toss well. Cover and refrigerate for 1 hour.3:
Remove fromrefrigerator, add the mint, salt, and pepper, and toss again.
