Baby Carrots with Fresh Mint

lb baby carrots 1
honey 2 tsp
fresh chopped mint 1.50 Tbsp
Salt and pepper to taste

Bring 4 cups of lightly salted water in a medium saucepot to a boil. Add in the carrots, cover, and cook for about 4 minutes. Turn off the heat and let stand in the hot water for 2 minutes. Drain.


Add the carrots to a serving bowl. Drizzle with honey. Toss well. Cover and refrigerate for 1 hour.


Remove fromrefrigerator, add the mint, salt, and pepper, and toss again.
