Black Beans, Grape Tomatoes, and Lime

| 15-oz can black beans, rinsed and drained | 1 |
| grape tomatoes, quartered | 0.50 cup |
| lime juice | 1 Tbsp |
| to 1 tsp ground cumin | 0.50 |
| extra virgin olive oil | 1 Tbsp |
| Tbsps chopped cilantro | 2 |
Place a large nonstick skillet over medium-high heat until hot. Coat skillet with cooking spray, add the onions, and coat with cooking spray. Cook onions 4 minutes or until beginning to brown, stirring frequently. Stir in the beans, tomatoes, lime juice, and cumin. Cook 1 minute or until heated through, stirring frequently. Remove from heat.
2:Season lightly with salt and pepper, if desired. Drizzle the oil evenly over all, and sprinkle evenly with the cilantro. Do not stir. Cover and let stand 5 minutes to absorb flavors.
