A satay is a spicy Indian kabob and is a great, filling meal.
|corn oil||1 Tbsp|
|lime juice||3 Tbsp|
|red chili, minced||1|
|ground coriander seeds||1 tsp|
|lb boneless, skinless chicken breasts, cubed into 1-inch pieces||1.50|
In a blender, combine all ingredients for the satay sauce.2:
Place the chicken cubes in a bowl, cover with the sauce, and marinate in a refrigerator for 4 hours.3:
Prepare an outside grill with an oiled rack set 4 inches above the heat source. On a gas grill, set the heat to high.4:
If using wooden kabob skewers, soak 6 of them in warm water for 15 minutes. This prevents the skewers from catching on fire while the kabobs cook.5:
Then thread the chicken cubes on the skewers.6:
Grill the satays for about 4-5 minutes total, until the chicken is cooked through.
