Chunky Greek-Style Salad with Tuna

Here’s a salad with lots of crunch--and lots of flavor.

red wine vinegar 0.50 Tbsp
dried thyme leaves 0.50 tsp
dried basil leaves 0.50 tsp
crumbled reduced-fat feta cheese 0.50 cup
mixed salad greens 6 cups
oil-cured pitted Greek olives, seeded and chopped 5
cucumber, peeled and cubed 1 small
sliced green onion 2 Tbsp
medium tomato, cubed 1
6-oz can water-packed albacore tuna, well drained 1
seasoned croutons 1 cup

In a large bowl, combine oil, vinegar, thyme, and basil.Stir to mix well.

Stir in the cheese.Add the greens, olives, cucumber, onion, and tomato. Toss to coat with dressing.

Add the tuna and croutons; toss.Serve immediately.
