Curried Shrimp Tea Sandwiches

A fresh, crispy afternoon treat or for a formal tea party. Double the ingredients to use as a party appetizer.

whole wheat bread, crusts cut off 3 slices
small cooked shrimp 1.50 cups
diced celery 0.50 cup
unpeeled apple, chopped 1 small
golden raisins 2 Tbsp
finely minced sweet onion 2 Tbsp
nonfat mayonnaise 0.50 cup
lemon juice 1 tsp
honey 0.50 tsp
curry powder 0.50 tsp
Salt and pepper to taste
dill, chopped 1 Tbsp

Place thethree slices of bread on a work surface.

Combine the shrimp, celery, apple, raisins, and onion and mix well.

In a small bowl, whisk together the mayonnaise, lemon juice, honey, curry powder, salt, and pepper.

Add this mixture and the dill to the shrimp and mix well.

Spread the curry shrimp mixture onto all the bread slices.

6:

With a serrated knife, cut each bread slice into 4 squares or triangles.
