Fresh Berry Terrine

Serving Size: 1 (1-inch) slice
This light molded fruit terrine is great with low fat yogurt on the side.

| light white cranberry juice, divided | 2 cups |
| unflavored gelatin | 2 envelopes |
| quartered strawberries | 2 cups |
| fresh raspberries | 2 cups |
| fresh blueberries | 2 cups |
Pour 1/2 cup of the cranberry juice into a medium bowl, and sprinkle the gelatin over the juice.
2:Let stand 5 minutes to soften.
3:Place 1/2 cup of the remaining cranberry juice in a small saucepan and heat to boiling.
4:Pour over the gelatin mixture, and stir until the gelatin dissolves.
5:Stir in the remaining 1 cup cranberry juice.
6:Place the strawberries, raspberries, and blueberries in an 8- × 4-inch loaf pan.
7:Pour the cranberry mixture over the berries.
8:Cover and refrigerate overnight.
9:Run a thin-bladed knife around the edge of the terrine and invert onto a serving platter.
10:Cut into slices using a serrated knife.
