Frozen Lemon Tartlets

This fabulous frozen sorbet treat is a low calorie treat.

| reduced-fat gingersnap cookies, crumbled | 9 |
| 67% vegetable oil butter-flavored spread, melted and cooled | 1 Tbsp |
| no-sugar-added lemon sorbet, softened | 2 cups |

Line 8 muffin cups with paper liners.
2:Place the crumbled cookies in a food processor, and process until finely ground.
3:Transfer to a medium bowl and stir in the butter-flavored spread.
4:Spoon about 1 Tbsp of the cookie mixture into each muffin cup, and press into the bottom.
5:Freeze for 30 minutes.
6:Spoon 1/4 cup sorbet into each muffin cup, smoothing the tops.
7:Freeze 4 hours or until firm.
8:Allow to stand at room temperature 5 minutes before serving.
