Swordfish with Fresh Tomato Sauce

Serving Size: 3 oz fish and sauce
Keep swordfish juicy and moist with this fresh-from-the-vine tomato sauce.

| fesh lemon juice | 2 Tbsp |
| olive oil | 1 Tbsp |
| Sauce | |
| white wine | 0.25 cup |
| garlic cloves, minced | 3 |
| scallions, chopped | 2 |
| ripe tomatoes, chopped | 4 |
| minced thyme | 2 tsp |
Marinate the fish in the lemon juice and olive oil for 10 minutes at room temperature while you prepare the tomato sauce.
2:In a heavy skillet, heat the wine. When it is slightly boiling, add the garlic and scallions. Saute for 3 minutes. Add the tomatoes and thyme. Bring to a boil and simmer for 10 minutes.
3:Remove the swordfish from the marinade. Grill or broil the swordfish for 3-4 minutes per side. Top with fresh tomato sauce to serve.
