Tex-Mex Ground Beef Skillet

|medium green pepper, seeded and diced||1|
|celery stalk, sliced||1 large|
|mild salsa||0.50 cup|
|frozen corn kernels||1 cup|
|canned chickpeas, washed and drained||1 cup|
|chili powder||1.50 tsp|
|uncooked quick-cooking rice||0.50 cup|
|shredded fat-free Cheddar cheese||0.75 cup|
In a large nonstick skillet, cook the beef, green pepper, and celery over medium heat, stirring frequently, until the beef is browned, about 6 to 8 minutes.2:
Add salsa, tomato, water, corn, chickpeas, chili powder, and salt. Cover and bring to a boil. Reduce the heat, and simmer 10 to 12 minutes stirring occasionally.3:
Bring to a boil. Add the rice, and stir it into the sauce. Cover, remove the pan from heat, and allow to sit until the rice is tender, about 5 minutes. Sprinkle on cheese and stir into mixture.
