Tropical Fruit and Vegetable Salad with Chili and Cilantro Dressing

Chilled and refreshing, this salad is an excellent meal within itself or as a side to a beef or tofu steak on the grill.

lime juice 3 tsp
honey 1 tsp
fresh red chili, seeded and minced 0.50
minced cilantro 2 tsp
medium red onion, halved and sliced 0.25
English cucumber, unpeeled and thinly sliced 0.50
kiwi fruits, peeled and sliced 2
mango, sliced 1 large

Whisk together the dressing ingredients. Add the red onion to the dressing and marinate for 30 minutes.


Arrange the cucumber, kiwi, and mango in a shallow serving bowl. Arrange the marinated onions with all the dressing on top of the mango mixture.
