Tropical Fruit and Vegetable Salad with Chili and Cilantro Dressing

Chilled and refreshing, this salad is an excellent meal within itself or as a side to a beef or tofu steak on the grill.

| medium red onion, halved and sliced | 0.25 |
| English cucumber, unpeeled and thinly sliced | 0.50 |
| kiwi fruits, peeled and sliced | 2 |
| mango, sliced | 1 large |

Whisk together the dressing ingredients. Add the red onion to the dressing and marinate for 30 minutes.
2:Arrange the cucumber, kiwi, and mango in a shallow serving bowl. Arrange the marinated onions with all the dressing on top of the mango mixture.
