Turkey-Veggie Burger

Serving Size: 1 patty

Any mixture of your favorite vegetables may be used. The patties will be easier to handle if the vegetables are cut into smaller pieces.

frozen peas 0.25 cup
shredded carrots 0.25 cup
chopped mushrooms 0.25 cup
eggs, lightly beaten 2
nonstick cooking spray
whole-wheat hamburger buns 4
shredded iceberg lettuce 1 cup
medium slices tomato 4
medium slices red onion 4
cubed cantaloupe 3 cups

In a large bowl, combine turkey, peas, carrots, mushrooms, and eggs. Divide mixture into four patties.


Spray a skillet with cooking spray, and heat on medium heat. Cook patties for 4 minutes on one side; then turn over and cook for an additional 3 minutes


Place a burger on each roll. Top with lettuce, tomato, and onion.


Serve with a side of cantaloupe.
