In a large bowl, combine turkey, peas, carrots, mushrooms, and eggs. Divide mixture into four patties.2:
Spray a skillet with cooking spray, and heat on medium heat. Cook patties for 4 minutes on one side; then turn over and cook for an additional 3 minutes3:
Place a burger on each roll. Top with lettuce, tomato, and onion.4:
