Turkey-Veggie Burger

Serving Size: 1 patty
Any mixture of your favorite vegetables may be used. The patties will be easier to handle if the vegetables are cut into smaller pieces.

| frozen peas | 0.25 cup |
| shredded carrots | 0.25 cup |
| chopped mushrooms | 0.25 cup |
| eggs, lightly beaten | 2 |
| nonstick cooking spray | |
| whole-wheat hamburger buns | 4 |
| shredded iceberg lettuce | 1 cup |
| medium slices tomato | 4 |
| medium slices red onion | 4 |
| cubed cantaloupe | 3 cups |
In a large bowl, combine turkey, peas, carrots, mushrooms, and eggs. Divide mixture into four patties.
2:Spray a skillet with cooking spray, and heat on medium heat. Cook patties for 4 minutes on one side; then turn over and cook for an additional 3 minutes
3:Place a burger on each roll. Top with lettuce, tomato, and onion.
4:Serve with a side of cantaloupe.
