Wilted Kale Salad

Kale, a dark green, ruffled form of cabbage, is the new rage among foodies and it's great for you, too!

-3Tbsp cider vinegar 2
sugar 1 Tbsp
canola oil 2 tsp
salt (optional) 0.13 tsp
canola oil, divided 2 tsp
finely chopped smoked turkey sausage 1 cup
chopped onion 0.50 cup
16oz package fresh kale, coarsely chopped, washed well, and patted dry 0.25
tomato slices (optional) 8
Louisiana-style hot sauce, to taste

Combine the vinaigrette ingredients in a jar, secure lid, and shake vigorously to blend well.


Heat 1 tsp canola oil in a large nonstick skillet over medium-high heat. Tilt skillet to coat bottom lightly; add sausage and cook 3 minutes or until browned, stirring frequently. Set aside on a separate plate.


Add remaining 1 tsp oil, tilt skillet, add onion, and cook 3 minutes, stirring frequently. Add kale, sausage, and vinaigrette; cook 30 seconds, stirring constantly with two utensils. Serve immediately for peak flavors.
