Yellow Rice and Red Pepper Tosser

| diced onion | 0.50 cup |
| medium red bell pepper, thinly sliced and cut into 2-in pieces | 0.50 |
| quick-cooking brown rice | 0.50 cup |
| water | 1 cup |
| ground turmeric | 0.13 tsp |
| of 1 oz package taco seasoning mix | 0.50 |
| chopped fresh cilantro leaves | 0.25 cup |
| medium lime, quartered | 1 |
Heat 1 tsp canola oil in a large nonstick skillet over medium-high heat. Tilt skillet to coat bottom lightly. Add onion and cook 3 minutes or until brown on edges. Add 1 tsp canola oil and bell pepper; cook 3 minutes, using two utensils to stir.
2:Add rice, water, and turmeric to skillet. Bring to a boil over medium-high heat.
3:Reduce heat, cover, and simmer 10-12 minutes or until water is absorbed. Remove from heat; add taco seasoning, cilantro, and remaining 1 tsp canola oil.
4:Toss gently and served with fresh lime wedges.
