Yellow Rice and Red Pepper Tosser

diced onion 0.50 cup
medium red bell pepper, thinly sliced and cut into 2-in pieces 0.50
quick-cooking brown rice 0.50 cup
water 1 cup
ground turmeric 0.13 tsp
of 1 oz package taco seasoning mix 0.50
chopped fresh cilantro leaves 0.25 cup
medium lime, quartered 1

Heat 1 tsp canola oil in a large nonstick skillet over medium-high heat. Tilt skillet to coat bottom lightly. Add onion and cook 3 minutes or until brown on edges. Add 1 tsp canola oil and bell pepper; cook 3 minutes, using two utensils to stir.


Add rice, water, and turmeric to skillet. Bring to a boil over medium-high heat.


Reduce heat, cover, and simmer 10-12 minutes or until water is absorbed. Remove from heat; add taco seasoning, cilantro, and remaining 1 tsp canola oil.


Toss gently and served with fresh lime wedges.
