Rice and Black Bean Mediterranean Delight

This hearty main dish is good served with a crisp salad and warm whole-wheat rolls.

| red leaf lettuce, washed and torned | 1 cup |
| cooked long-grain rice | 0.75 cup |
| small cucumber, peeled and sliced | 0.50 ea |
| can black beans, drained and rinsed | 4 |
| ground cumin | 0.50 tsp |
| hot pepper sauce | 2 dash |
| fresh ground pepper to taste | 1 pinch |
| cherry tomatoes | 3 ea |
| chopped green onion | 2 Tbsp |
| cilantro, fresh chopped | 1 Tbsp |
| small lemon, halved | 1 ea |
| balsamic vinegar | 1 Tbsp |
| part-skim feta cheese, crumbled | 1 Tbsp |
Arrange the lettuce to cover a dinner plate. Spoon the cooked rice over the lettuce to form a circle. Cut the cucumber slices in half and arrange them around the rice circle.
2:. Combine the beans, cumin, hot sauce, and pepper in a small microwave-safe bowl. Cover and cook on medium for 60-90 seconds, or until the beans are hot.
3:Pour the bean mixture over the rice. Top with the tomatoes, green onions, and cilantro.
4:Squeeze half of the lemon over the entire plate. Slice the remaining lemon into half-circles and place them between the cucumber halves. Sprinkle with balsamic vinegar and top with feta cheese to serve.
