Shrimp Skewers

wooden skewers 3 ea
large peeled and deveined shrimp (about 9) 6 oz
cherry tomatoes 3 ea
pearl onions, peeled 3 ea
1-inch pieces green pepper 3 slices
(1/2 –inch) slices zucchini 6 slices
whole mushrooms, cleaned 3 ea
unsweetened pineapple chunks 0.75 cup
fat-free Italian salad dressing 2 Tbsp
1:

Soak skewers in warm water for 15 minutes (so they don´t burn on the grill).

2:

Remove skewers from water and alternate shrimp, vegetables, and pineapple on the skewers.

3:

Prepare an oven broiler o grill. Approximately 6 inches from the heat source, broil or grill the skewers on each side for a total of 10 minutes, basting with salad dressing. Serve with rice.
