|large peeled and deveined shrimp (about 9)||6 oz|
|cherry tomatoes||3 ea|
|pearl onions, peeled||3 ea|
|1-inch pieces green pepper||3 slices|
|(1/2 –inch) slices zucchini||6 slices|
|whole mushrooms, cleaned||3 ea|
|unsweetened pineapple chunks||0.75 cup|
|fat-free Italian salad dressing||2 Tbsp|
Soak skewers in warm water for 15 minutes (so they don´t burn on the grill).2:
Remove skewers from water and alternate shrimp, vegetables, and pineapple on the skewers.3:
Prepare an oven broiler o grill. Approximately 6 inches from the heat source, broil or grill the skewers on each side for a total of 10 minutes, basting with salad dressing. Serve with rice.
