Herbed Crab Sandwiches

Crab and cream cheese are a great combination. (These sandwiches are relatively high in sodium.)
|lump crab meat||1.50|
|low-fat mayonnaise||0.25 cup|
|minced fresh parsley||1 Tbsp|
|minced fresh tarragon||1 Tbsp|
|minced scallions||2 Tbsp|
|low-fat cream cheese||6|
|eggs, beaten||2 ea|
|Dijon mustard||1 tsp|
|English muffins, split and toasted||6 ea|
Combine the crab, mayonnaise, parsley, tarragon, and scallions in a medium bowl.2:
In a separate bowl, beat together the cream cheese, eggs, and mustard.3:
Spread the crab mixture over the English muffins. Spread the cream cheese mixture on top, and broil the muffins 6 inches from the heat source for 3 minutes.4:
Add the tomato slices and broil.
