Herbed Crab Sandwiches

Serving Size: 1 English muffin, 3 oz crab

Crab and cream cheese are a great combination. (These sandwiches are relatively high in sodium.)

low-fat mayonnaise 0.25 cup
minced fresh parsley 1 Tbsp
minced fresh tarragon 1 Tbsp
minced scallions 2 Tbsp
low-fat cream cheese 6
eggs, beaten 2 ea
Dijon mustard 1 tsp
English muffins, split and toasted 6 ea
tomato 6 slices

Combine the crab, mayonnaise, parsley, tarragon, and scallions in a medium bowl.


In a separate bowl, beat together the cream cheese, eggs, and mustard.


Spread the crab mixture over the English muffins. Spread the cream cheese mixture on top, and broil the muffins 6 inches from the heat source for 3 minutes.


Add the tomato slices and broil.
