Salmon with Grapefruit Sauce
Number of Servings: 4
Serving Size: 3-1/2 oz. salmon plus 2 tablespoons sauce
Salmon definitely tastes better the more simply it's prepared. Slightly sweet yet tart grapefruit juice intensifies the flavor of the sauce and also helps keep the fish from drying out. Garnish the fish with ruby red grapefruit segments mixed with chopped fresh basil to complement the beautiful orange-pink color of the fish.
| Name: | Amount: |
| shallots, minced or finely chopped sweet onion | 0.50 cup |
| olive oil | 2 tsp |
| salmon fillet (1 pound total), cut into 4 pieces | 1 ea |
| grapefruit juice and segments for garnish, preferably ruby red | 0.75 cup |
Sauté the shallots in the oil in a nonstick skillet until tender, about 4 minutes. Add the salmon and grapefruit juice. Cover and simmer over low heat until the salmon is opaque, about 6 to 8 minutes. Transfer the salmon to warm serving plates.
2:Increase the heat and simmer the juices about 2 minutes until reduced to 1/2 cup; pour over the salmon.
