Bolognese Sauce

This traditional Italian meat sauce is a snap to make and freezes well. Make a big batch so you always have some on hand. Use it as a base sauce for lasagna or ladle some over any shape of pasta, from angel hair to ziti.

| clove garlic, minced | 1 ea |
| carrot,coarsely chopped | 0.25 cup |
| can diced tomatoes in puree, undrained | 16 |
| dry red wine | 0.25 cup |
| chopped fresh basil | 1 Tbsp |
| chopped fresh oregano | 2 tsp |
| salt | 0.75 tsp |
| fresh ground black pepper | 0.16 tsp |
| tomato paste | 1 Tbsp |
Brown the ground beef in a large nonstick skillet with the onion, garlic, and carrot over medium heat; drain off the fat and return the beef and vegetables to the skillet.
2:Add the tomatoes with their liquid, the wine, and the seasonings and herbs. Cover and simmer for 40 to 45 minutes, stirring occasionally.
3:Stir in the tomato paste; simmer, uncovered for 5 to 10 minutes, until slightly thickened.
