Tuscan Tuna and White Bean Salad

There's no better reason to keep your pantry stocked with canned water-packed tuna and cannelloni or navy beans than this satisfying, fiber-rich Italian salad, which can be prepared in less than 10 minutes. Although commercially prepared dressing is perfectly acceptable, vinaigrette made with a fruity olive oil and a good red wine vinegar will taste even better. Sprinkle the top of the salad with chopped flat parsley for a fresh, bright green color contrast.
