Orange Sweet Potatoes

| medium oranges, unpeeled | 5 ea |
| brown sugar | 0.33 cup |
| brandy | 0.50 cup |
| evaporated skim milk | 0.25 cup |
| low-calorie margarine | 2 Tbsp |
| cooked mashed sweet potatoes | 4 cups |
| nutmeg | 1 dash |
Grate the peel from one orange. Cut the remaining oranges in half. Scoop out the pulp to yield 2 cups of drained fruit and save the shells.
2:Cut a thin slice from the bottom of each orange shell to make it sit flat. Sprinkle the orange pulp with brown sugar and set aside.
3:Heat the oven to 350 degrees F. In a medium saucepan, heat the brandy, evaporated milk, margarine and salt. Add to the sweet potatoes and mix well.
4:Stuff each of the 8 oranges shells with 1/2 cup of the sweet potato mixture. Sprinkle each shell with grated orange peel. Bake for 30 minutes. Garnish with a dash of nutmeg.
