large fresh tomatoes 8 ea
low-calorie margarine 2 tsp
chopped onion 2 ea
green bell pepper, chopped 1 ea
okra fresh or frozen 16 oz
frozen corn, thawed 1 cup
sugar 2 tsp
dry bread crumbs 0.50 cup

Plunge tomatoes in boiling water for 1 minute to make them easier to peel. Peel and chop the tomatoes.


Heat the margarine in a large skillet and saute the tomatoes, onions, and bell pepper. Add the okra, corn, and sugar and simmer for 25 minutes. To thicken, add the breadcrumbs and stir well.
