Red Potato Salad

| red potatoes | 1 |
| diced red onion | 6 Tbsp |
| celery, diced | 0.50 cup |
| lite mayonnaise | 3 Tbsp |
| Dijon mustard | 2 Tbsp |
| salt | 0.50 tsp |
| black pepper | 0.50 tsp |
| chopped green onions | 2 ea |
In a large pot, bring the water to a boil. Add the potatoes. Return the water to a simmer, cover, and cook for 15-20 minutes, or until done. Remove the potatoes from the water and let them cool.
2:Cut the potatoes into quarters and place them in a large bowl. Add the next ingredients and mix together gently. Refrigerate overnight. Garnish with chopped green onions.
