Amaretto Rice Pudding

Serving Size: 1/2 cup
Amaretto is the secret ingredient in this smooth rice pudding.

| chopped dried peaches | 0.50 cup |
| amaretto | 0.25 cup |
| uncooked long grain rice | 0.50 cup |
| evaporated skim milk | 4 cups |
| butter | 2 tsp |
| sugar | 0.25 cup |
| eggs, beaten | 2 ea |
| cinnamon | 1 dash |
| nutmeg | 1 dash |
Soak the peaches in the Amaretto for 10 minutes. Set aside. Combine the rice, milk, butter, and sugar in a saucepan. Bring to a boil, lower the heat, and cook until the rice has absorbed the milk but the mixture is creamy, about 15- 20 minutes. Stir constantly so the milk does not curdle.
2:Add the peaches and cook 1 more minute. Remove for the heat and add the eggs. Return to the heat and cook for about 5 minutes until the mixture is creamy. To serve, sprinkle individual dishes of rice pudding with cinnamon and nutmeg.
